Get all your ingredients together. It's much easier to work when they're all in the one place. Timing of ingredients in this dish is dependent on each other. We don't want a cold dish.

One large onion chopped into thick chunks.

Preheat 1 tbsp of olive oil and 1 tbsp of butter. We use both to allow the onion to become crisp and draw out the onion flavour. Butter has high salt content.

Fry the onion. Tip: Make sure your oil is hot enough. You don't want to just soak the onion.

While your onion is cooking, boil hot water for your chicken.

My father's psychotic chickens survived this time. And they're too cute. Plus we need 3 eggs a little later. Lol.

Boil the chicken breast for just 5-7 minutes. This will do 2 things: soften the chicken and remove any bad chemicals or germs (not accusing anyone here but we can't be too careful).

Chop the bacon into any size you like but don't dice too small. Chunky is more yummy.

Add to the crispy onion and stir. Fry the bacon until it's crispy.

Get your pasta ready. Carbonara is best served with fettucine. We like spaghetti. It's your choice. Any long thick pasta will do.

Add 1 tablespoon of minced or crushed garlic. We added the garlic now as we don't want to fry the garlic, just cook it for that extra garlic kick.

Cut your chicken into slices, pieces, bits or even make shapes if you have the time. We don't want the chicken totally boiled or cooked. We will fry it with the onion and bacon later.

Chop chop chop.

Add the chicken pieces to the bacon and stir, cooking on medium heat.

Note: at this point we need to cook the chicken thoroughly. We don't want salma or nella visiting. Note: Salmonella is a major cause of food poisoning in most restaurants.

After your pasta is cooked place in a colander and let it rest.

On medium heat place your saucepan on the stove. This next part can make your dish a success or failure. Don't rush we don't want curdled cream. Let's continue.

1 tbsp of Olive oil and butter. Let the butter melt slowly. If you burn your pot I'm not scrubbing it. Medium heat.

Crack some pepper over the top. If the smell burns your eyes then your heat is up too high. The black pepper should be just floating on the top.

Add 600 ml of pure cream or cooking cream.

3 eggs into the cream and stir through gently.

Is it looking something like this? Fantastic! We're almost there.

Again??? Yes boil your kettle and pour the water over the spaghetti. This method heats up the spaghetti again and helps cook the egg and cream.

Hint: when cooking spaghetti, only use salt. Adding oil wastes your precious oil and it just floats to the top. A better way is after you cook the pasta stir through 1 tbsp of olive to stop sticking

Add the pasta to the cream and stir gently.

Add the bacon, onion and garlic to the creamy spaghetti, stir through gently. And.....

Serve in a plate not a bowl. Bossy aren't I? Hahahah.

This lets us plate kickers to devour the creamy goodness. Don't deny it!! Everyone licks the plate when it's this good. Or if you're a delicate queen, use a piece of bread to soak up the cream.

Your dish should have a sparkle and shine.

See the cream sauce starting to trickle to the bottom of the plate. This is the best surprise at the end of the dish.

Sprinkle the Parmesan cheese all over. Let the flavours of bacon and Parmesan hit your taste buds. Enjoy enjoy enjoy. A glass of wine is a suitable partner. We said 1 glass not a bottle. Lol.
